GI Bill schools

Hey y’all. I’m not sure if this is the right place to post this type of question, but I’m looking to start using my GI Bill and wanted to get your take on some schools and programs.
A little background: I found out shortly before the end of my career that the stuff to transfer my GI Bill to my son wasn’t done right and I didn’t follow up after so many years so I guess that’s on me. But now I have my GI Bill sitting here and I feel like I have to use it so it doesn’t go to waste. I figured I would also set an example for my kids by earning a degree. I joined straight out of high school so no prior credits there and I didn’t really take more than a few classes while in which I do regret a little. But between plenty of deployments, family stuff and life in general, college wasn’t a high priority for me. To be honest with y’all, I’m not overly excited about going to school again since it’s been a long time. I do have a full time job and the kiddos so I’d want to do online classes and start out with one class a semester (at least for awhile until I can flush out a routine, etc.). I will also be honest too that my job doesn’t put too much stock in having a specific degree in engineering or accounting or something. They really just barely care if you have something at all, outside of being a little extra nugget for them to use for justification with promotions and raises.
With that said, I can basically study whatever and my kids are young enough that just doing homework beside them at night will be an example, I think. Really it’s all so when they ask if I went to college then I can say yes and make them proud that way. I have done research and found a few programs that cater to people who have been out of school for awhile. West Virginia University has a regents bachelor. U of Alabama has a program like that as well. Those type of things are really what I’m looking for since it would help me stay motivated to study things interesting to me. I’m not really set an one type of program and would be just as happy earning an associates as a bachelors. I have also put some thought into getting an associates from somewhere like Sonoran Desert Institute (the degree mill college for gunsmithing that gun YouTubers push) since I do gun stuff in my free time anyways, plus it’s kinda funny to me that the government would be essentially paying for me to build ghost guns in my garage. I also live in Florida, fyi, since it seems it matters for some schools about in/out of state tuition.
Anyways, I apologize for the long post. I just wanted to know if you know anymore programs like the ones I mentioned for people with outdated SAT scores. Or have any other advice or opinions or experiences using your GI Bill. Thanks for reading/commenting. I wish y’all the best life, you deserve it!
